2015 Small Lot Natural Orange Wine

Eyes: Bright amber in colour, with some cloudiness from lees in the bottle.
Nose: Expressive nose with notes of wildflowers, tangerine, marmalade and bergamot.
Mouth: While the aromas suggest sweetness, the wine is bone-dry, with herbal replays and volume created by tannins and lees on the palate. The finish is long with the fruit and structure in fine balance. This very adaptable food wine pairs well with well-ripened cheeses [brie-style, taleggio], tempura / battered vegetables, cream sauces, herbed omelettes and smoked fish.
Winemaking notes: The handpicked clusters of our estate biodynamic vineyard were sorted, and then foot tread to crush ~30% of the berries. These were allowed to naturally ferment in partially covered bins for 25 days. The combination of whole clusters, stems, skins and juice makes a complex fermentation that does not really forma cap, so punch downs were infrequent allowing more of an infusion to take place. Temperatures gently rose to 25°C for 2-3 days, but stems, having no sugar, moderate the heat of fermentation. Both alcoholic (AF) and malolactic (ML) fermentations finished simultaneously in about 20-25 days. The bins were gently pressed and the wine allowed to settle. After 3 rackings, the wine was bottled without filtration. No additives of any kind were made to this wine.
